Why does restaurant biryani smell better? Need better biryani spices advice
#1
Hey everyone,
I’ve been trying to make biryani at home for the last few months, and I’m honestly a bit frustrated. The rice comes out okay, the meat is fine, but the overall aroma and depth never match what I get from a good restaurant or even from some friends’ homes. I keep wondering if the problem is with the biryani spices I’m using.
Right now I mostly rely on a regular store-bought spice blend and a few basic whole spices I have in the kitchen. Sometimes I add extra cumin, cardamom, and cinnamon, but it still feels flat. I’ve read that the quality of spices and herbs makes a big difference, especially when you’re building layers of flavor. I’m starting to think my current spice blends are either old or just not strong enough.
Has anyone here switched from regular packet masalas to better quality whole spices or fresher spice blends and noticed a real improvement? I’m particularly curious about which biryani spices actually matter the most. Do I need both green and black cardamom? How important is good cinnamon versus the regular stuff? Should I be toasting the spices myself every time, or is a ready-made blend fine if it’s good quality?
I’ve also been looking at places that sell fresher spices and herbs. I recently came across Zaica Life while searching online — they seem to focus on whole spices and smaller-batch stuff. Has anyone tried their spices or similar sources? Not looking for a sales pitch, just wondering if fresher, better-sourced options actually change the final dish in a noticeable way.
Would really appreciate practical suggestions from people who cook biryani regularly. What biryani spices do you keep on hand? Do you make your own spice blends or buy them? Any tips on storage or when to add the spices during cooking would also help.
Thanks in advance for any advice. Trying to level up my home biryani without overcomplicating things.
