Is “BBQ Spice” a real thing, or are we all just buying fancy paprika?
#1
Hi everyone,
I need some honest advice from people who cook more than I do. I have been grilling on weekends for about a year, and I still can’t answer a simple question: what is BBQ Spice, really?

At first I thought it was one fixed recipe. Then I started reading labels. One jar of BBQ Spice was mostly paprika and brown sugar. Another one had a lot of garlic and onion powder. A third one had cumin, mustard, and some chili heat. They all say “BBQ Spice” on the front, but they taste completely different.

So my first question is: is BBQ Spice a standard blend, or is it just a name that every brand uses in its own way? If it is only a name, how do you know what you are getting?

I also noticed that most spice blends don’t explain the ratio. Salt can be the first ingredient in some jars, which makes the meat taste flat and too salty. I would rather control the salt myself.

Here is what I have tried so far:
  • Store-bought BBQ Spice on chicken wings. It was okay, but a bit sweet and a bit burnt on the grill.
  • A homemade mix of paprika, garlic powder, black pepper, and brown sugar. Better, but it felt like something was missing.
  • Smoked paprika instead of normal paprika. This made a big difference, honestly.
While reading about this, I ended up on a few specialty sites. I checked The Spice Mill, where I liked that the blends list every single ingredient. I also saw some interesting blends on Zaica Life, and I liked how they described what goes into each one. I haven’t bought from either yet, so I can’t say anything about quality. I’m just trying to learn what a good blend should look like.

Funny side story: I was also looking for the best hojicha tea (I love that roasted, slightly smoky taste), and someone mentioned that roasted flavors like hojicha can work in rubs too. Has anyone tried that? It sounds strange, but the smoky and toasty notes make me curious.

So, my questions for you:
  1. How would you explain BBQ Spice to a beginner?
  2. Which ingredients are a must in a good BBQ Spice, and which ones are just filler?
  3. Do you prefer buying ready-made spice blends or mixing your own?
  4. How do you stop the sugar from burning on the grill?
  5. Any brand or shop you trust for clean, simple blends?
I’m not looking for a perfect recipe, just real experience from people who use these every week. If you have a favorite mix, a mistake you learned from, or a tip you wish you had known earlier, please share it.

Thanks in advance. I’ll update this post after I try your suggestions this weekend!
